    Please stop saying "perfect" risotto….because you are far from it !!!…And in Italy we say Risotto all'onda and no con la onda !!! The wave should take place at the key phase of the recipe, which is the end, that we call "mantecatura" … Which is really best with cold butter, and which is done quickly with a lot of energy. I invite you to look a real video of a real italian chef do it….we speak about "mantecatura all'onda"

    When i lived overseas (not Italy) my favorite restaurant had beautiful risotto, the classic white. It has become a comfort food to me-and takes me back to happy times in . . . Arabia! I wish some chefs wouldn't go on about how hard it is to make-it is simple, just be a little patient. Thanks Laura for presenting this in a way that is accessible to any cook.
