    I keep getting a hard dough after pouring the eggs… is not sticky at all but is not a very malleable dough. What am I doing wrong or what else does it need?

    I am definitely a beginner because, I used 4 whole eggs, that weren't really big oh, olive oil, salt, two cups of flour… my dough I thought it was too dry so I added an extra egg which is why I got to 4, and now I'm not sure if I'm doing this right but I'm ready to call it quits. I feel like I've worked it a lot and it has a of a spring but for now it's just fighting me as far as trying to knead it… it's kind of tough… also, I didn't have plastic wrap… So I put it in a ziplock bag and squeeze all the air out… A struggle

    Why can't you just mix it in a bowl? I see this all the time, they make a "bowl" of flour with a well in the center, but if all you're doing is mixing the egg and flour together, why not do it in a bowl and avoid the mess?

    Yeah, I know it's traditional, that it's supposedly the way they did it in ancient Italy or whatever, but why today?

    WAAAAAAY too many eggs, for Spaghetti this could still be okay. But if you're making Fettuccine Alfredo or something with a cream or butter sauce this recipe will be way too rich.

    All the talk about gluten developing and poke test etc.; aren't you confused with bread making?

    Isn't authentic pasta just (fine) semolina and water? Unless you want 'egg pasta' in particular.

    I am in the habit of making homemade pasta as you are right… Once you start it's hard to go back to packaged pasta unless it is fresh out of the refrigerator section. Even then, there is nothing like homemade.

    She geeks out on how 2 eggs and 6 yolks with AP is different than using 3 eggs and 5 yolks in 00 then proceeds to put 9 eggs in the 00 flour.

    I came here after watching a steel making and steel rolling video. Well most of the steps are similar to making pasta without the use of a electric carbon arc fast cooker or 8000 ton rolling pins.

    8 eggs? better call it an omelet with flour. One more thing for everybody who is making YouTube vids: stop adding that disturbing music. But, and I mean it: thanks for posting. I mostly use 3/4 double 00 and 1/4 semolina. But indeed, only "00" tastes fantastic.

    I tried it and loved it but I noticed I wasn't able to get it to roll out so thinly. It's probably because I'm weak but it was still good as hell. Done it twice now and hopefully gonna make it 3 tmrw.
