    0:20 Don't break the spaghetti! +10^10 … Everytime I see the MIL and the wife break the spaghetti in half to "make it fit in the pot" my eye twitches… more twitching occurs when I hear "Authentic" from anyone that's never left the country talking to me about the foods of my heritage…

    I've been doing this recipe for years, I learned from a woman I met in southern Italy several years ago, she taught me how to do it. And I NEVER put the pasta water in my pan with the oil, simply because it's dangerous and also because water and oil DON'T mix, and you'll ruin your recipe. When your garlic is golden brown, simply turn off the heat and put the pan somewhere else, so the heat will go down and the garlic will STOP cooking. And I never put pepperoncino SPICE, yeaurk! Italians don't do that, but americans do, get it? I know what you'll say, she speaks italian so she IS italian, I never said she wasn't BUT she might live in U.S.A. today, and I also speak italian since I went in Italy years ago, does that make me italian ? No! And by the way I'm canadian, in case you wonder. And the best cheese you can use for this delicious recipe is parmigiano reggiano. So instead of using spice, I put real pepperoncino that I use full or I will cut them in small parts. Try it this way, you'll love it. Buon appetito.

    Shout out to Karen Reed: I agree totally, having been taught to cook properly by my sister's Sicilian husband I am happy to come back to the border of Istria where my Serbian father had a house for a long time, as well as living in Roma for 10 yrs. Where does that get us; the best teacher in the world!!!!! Accept no substitutes!
