    as a person who's been making all sorts of breads and dough for years….let me give u a piece of advice concerning pizza dough making…add all your liquids first(ie: water, evoo etc..), then salt, then sugar and any other spices you maybe want in the crust ei: garlic, oregano, basil etc.. then your flour, then on top of all that your yeast…then you can use your kitchenaid/dough hook and it'll be a much better mix. You need the sugar to be incorporated with the yeast so that the yeast can have something to "eat" in order to work effectively. Adding your oil after the dough is mixed is not a good idea. It just wont blend well and your dough will slip and slide into you bowl.

    With all due respect, but sugar? I have been in Italy some 15 times in many kitchens and never have I met an Italian adding sugar or olive oil to the basic dough of a pizza,

    up to 5 a 6 pizza's (napolitan:

    900 gr '00 flour'
    500ML Water
    5gr dry yeast
    25gr of seasalt

    make sure that every ingredient is close to 20degrees and let it rest for 5 a 6 hours in a room where it is also 20degrees.. its called the 20+20+20 rule
