I’ve obtained a tasty ingredient within the fridge that jogs my memory of my grandmother and my childhood, as a result of after I was a child, she used to prepare dinner an amazing dish for me… would you prefer to know what it’s? The sausage risotto, let’s make it collectively!
Ingredients for four servings:
Sausage risotto
(four servings)
• 1 ¾ cups (350 g) of Carnaroli (or Arborio) rice
• 2/three lb (300 g) of sausage
• slightly below ½ cup (100 ml) of white wine
• 1 shallot • a pinch of saffron
• ½ cup (50 g) of grated parmesan cheese
• 1 knob of butter
• beef broth
• salt, pepper and oil to style
In a big pan, warmth the oil and add the finely chopped shallot; sauté on a low flame till delicate, for no less than 15-20 minutes; it ought to flip virtually clear, not brown. In the meantime, crumble the sausage; you should utilize any sort of recent sausage you want: delicate, scorching, blended with pepper and so forth.
Here we’re, the sausage has been crumbled and the shallot has softened, so add to the pan and let it brown. It’s time so as to add the rice and let it toast for a few minutes till it is translucent. Now pour within the white wine. Once it is utterly evaporated, add the broth, however do not drown the rice in liquid, add it somewhat at a time, simply to cowl the rice.
The rice is cooked al dente, so flip off the warmth; 5 minutes earlier than the tip of cooking, add the saffron, which has been dissolved in somewhat scorching broth, together with salt and pepper. Now cream the risotto, which suggests stir within the grated cheese… add a knob of butter… stir, and let it sit for a few minutes, after that the sausage risotto is able to be served.
Look at that, it is completely cooked, because of the Carnaroli rice, that stays agency when cooked and it is nice for making risotto. My grandma can be pleased with me! And now, let’s get pleasure from our sausage risotto…

The perfect risotto should be moist and creamy… to achieve this result, once the rice is cooked, turn off the heat, add a small piece of butter and some grated parmesan cheese, and stir to blend well!

Hi Sonya! I would like to thank you for sharing this recipe! It's my 3rd time to cook and I chose this risotto recipe for my 3rd time in the kitchen. It came out so good! Thank you once again for teaching a guy like me to cook! 🙂 I look forward to doing more of your recipes. By the way the first time I cooked in the kitchen (in my entire life) is your original carbonara which also came out delicious!
