    3. Thow in some dry white wine or dry sherry, it just adds to the falvour,

    4. Why waste chicken stock when you have already made a stock, use the water you soacked your porcinni mushrooms in, again adds to the falvour and stops waste.

    He made a perfectly valid point that the pan was too small, which it is. So thats constructive, anyone watching this, use a bigger pan!

    Ohh and here a few more:

    1. Sweat the mushrooms down for about 20 mins, it will help release their water content and make the flavour more intense, use a LOW heat, this is cooking, not a race.

    2. Chop the mushrooms far bigger, about 1cm cubes, they will shrink in cooking and you dont want just a pulp at the end like these two bous have got.

    Well what looks wrong…every recipe I've ever seen for risotto requires you to add the a small amount of broth every couple minutes and let the rice absorb the flavor.

    I suggest: use the onion with the rice, and the garlic for the muscroom in another pan. Then near the end of cooking mix (without the garlic) with the risotto.
    PS: i don't slice the garlic, and you add too much 🙂

    thats why its risotto… not rice… if he said "here's how to cook rice: add water add rice.. TA DA!!!" then it would be rice and you would be right… but its not and you are not… look it up..

    You do stir riosttos,it's not pilaf…And better you don"t cover it with liquid but only add a little bit…

    yeah they do stir risottos i've seen a lot of chefs do this curtis stone, jamie oliver, mario batali almost every single chef i've watched on tv did stir the risotto
