In the 70-80’s I owned a sequence of eating places within the Los Angeles space referred to as The Original Sicilian Pizza Company. I’ve since bought the eating places and the final one closed in 1988. These are among the recipes that I had on my menu.

Original Sicilian Pizza Company Calamari Bolognese

Original Sicilian Pizza Company Calamari Bolognese

  • four kilos Squid — cleaned
  • 2 cups Onions — diced
  • half of cup Olive Oil
  • 2 cups Carrots — diced
  • 2 cups Celery — diced
  • 1/four cup Garlic — minced
  • half of teaspoon Saffron Threads
  • 1 cup Vermouth
  • 6 cups Tomato Sauce
  • To Taste Salt And Pepper
  • half of kilos Breaded Squid Tentacles, Deep Fried
  • four kilos Pasta Ribbons — al dente
  1. Working in batches, pulse squid in a meals processor till coarsely chopped. Refrigerate. Saute onions in olive oil till simply wilted. Add ,carrots, celery and garlic and prepare dinner till softened. Crumble in saffron. When aromatic add squid and prepare dinner quick to evaporate liquid. Add vermouth and scale back to nearly dry. Add tomato sauce, season and maintain. Per order warmth 2 cups sauce and re-heat about eight ounces pasta. Toss to mix. Garnish with fried tentacles in a bowl mix all elements collectively properly. You can enable this to take a seat in a single day earlier than serving. Mix with salad placing pepperchinnies on prime and cheese.

    Yield: 24 servings.
