    How long should you deepfry the rosemary? At what temperature? And what is the time/temperature for sage?

    Isn't it always wine first, evaporate and then start off with the stock?

    Looks nice but I would toast of the pumpkins separately and add them in towards the end to get that slightly different texture in the risotto. Just a personal choice, I like a little bit of a crunch and bite in it.
