In the bowl of a stand mixer, cream butter and sugar collectively till easy and creamy. Add salt, zest and vanilla and cream till well-combined. Mix within the eggs, one after the other, scraping the bowl as mandatory. Mix within the yolk. Add the self-rising flour and blend till simply mixed. Fold within the dried cranberries, white chocolate chips, and crystallized ginger till evenly distributed. Using an off-set spatula, unfold the dough evenly within the ready pan. Bake for 10 minutes. Rotate the pan and proceed to bake till the bottom is golden brown and pretty agency, for an extra 10-12 minutes extra. Remove from the oven and let cool on a rack.
