    How is this Italian?? It's more like an Americanized version of chicken cordon bleu….looks good,but it's definitely not Italian.

    Yes it is tricky so here are some tips. Use toothpicks to seal the stuffing inside the chicken real well … even some small bamboo skewers. When you place the chicken in the baking pan place the seam upwards. Gravity will cause the cheese to leak out the bottom. Finally you can position aluminum foil where it may leak so if it does a bit it doesn't leak all over the place. Good luck!

    How do you guys keep form the stuffing from pouring out? Just cooked some stuffed chicken breasts with a mix of pesto, fresh basil, sun dried tomatoes, and fresh mozzarella. It turned out okay, but I can't seem to keep the cheese from cooking out. I sear it on a pan for 2 minutes each side and then in the oven at 375 for 30 minutes.

    I'm seconding Lilweedkila. I watch too many videos where I'm saying outloud "get to the point!" This looks really good. My son's birthday is coming up and he said he wanted something Italian with chicken and bacon. I couldn't think of anything… then I found your video. Thank you. (My son said he wanted spicy, too, so I might have to add a bit of crushed red pepper to the outside.)

    @rosskellyimagine
    So are you saying raw bacon would be safer? The reason the bacon is cooked first is if you stuffed the chicken with raw bacon it would come out rubbery. Cooked bacon will work better taste and texture wise. Also there is no threat of cross contimation as the raw chicken is cooked properly hence no threat of posining. Thanks for watching.

    olive oil is a clean monounsaturated fat, and could never be considered bad for your health, even when heated. Heat just removes light aromatic compounds and takes away from the fresh fruity flavor associated with salad dressings.

    You don't use olive oil to "deep fry" but it's OK for pan frying chicken… and no, heating olive oil isn't bad for you where did you come up with this claim?
