I can zest the lemon perfectly fine, but when i zest my orange it just turns to a mush, any idea why this might be happening? Google had no good answers!

My mom made these by the thousands at Christmas time as kids. Christmas gifts for our teachers x 8 kids. My moms mom and her mom are from Naples too! When she baked the kitchen looked like a bomb went off. By the time everything was cleaned up (well past midnight) most of the Stuffoli were eaten!!I'm going to make your recipe for my mom this Christmas. Thank you Laura!  ? how far in advance can I make this? Buon Natale Laura
