    When coating the pan you need to use grape seed oil or a similar oil with a high flash point. Olive oil’s flash point is too low and you’re denaturing/burning it.

    The first deep dish I ever had, was a buttery medium thick crust, that went over the edges of pan, and was browned, with deep cheese, about 1.5 inches cheese with your toppings mixed in cheese. It was unbelievable. Now, seems deep dish is simply about a thick crust. Man, I miss that thick cheese pizza I ate when I was on a date at 16, at a restaurant in Denver/Cherry Creek, called Maxwells, and no longer there. This looks pizza no doubt is good, but not what I'm searching for.

    Made this Friday night and it might have been the best pizza I have ever tasted outside of Sally's, Pepe's & Modern in New Haven. Came out perfect following Joe's clear-cut directions! Made mine in a 14" Cast Iron so crust was a little thinner which doesn't hurt my feelings.

    Whenever I am watching you I feel like I grew up with you man!
    Your accent is closer to western ny than NY as before mentioned the whoe 'upstate thing!
    I generally don't go for that deep dish , but I hink it wouldn't hurt too bad to eat that…ah not at all!

    Ok I tried it and it was amazing. I was a little worried because my crust was not sizzling I think I made the crust too thick?? 500 degrees a little over 12 minutes. Still amazing. I'm sure after a couple more tries I'll get it. thank You

    Wow! I'm given this a try, Joe! Hey, my Venetian Nona used to make a fried dough called Bowties (I can't remember the Italian name). The dough was rolled out very thin, cut into strips, tied into knots, then fried, and sprinkled with powered sugar. Does this ring a bell? I'm told this is a very popular Italian dessert.     Looks great! Do you ever make Focaccia Barese? We made both focaccia and pizza with that special dough. (we're Barese) Added some Ricotta Forte which I really miss.
