Step 1: Heat the broth

    That's a good recipe, the only thing is you don't use chicken stock for all kind of risotto.
    The "norm" says: vegetable broth for vegetable risotto, fish broth for seafood risotto, meat broth (usually veal) for meat-based or saffron risotto. And NO CHEESE or butter in seafood risotto.
    That's because risotto is all about the harmony and the consistency of the ingredients.

    While wine adds flavour, a lot of chefs say it is an optional step. For example, you can leave it out if you cook for children or don't drink wine yourself. You can simply add a bit more stock and it will still be delicious.
