    Hi Vito, I used your recipe from video for dough and this is how it came out, my first time Neoplitan style pizza (I added some mushrooms) https://youtu.be/0lChKys6wqQ, I used 1 kg of flour so it came out 4 pizza 🙂

    Great video, Vito! I watch it everytime when I make a napoletana. Btw we were at Gino Sorbillo in Milan yesterday. I realised that his dough is really soft although the outside was nicely ‚leopardata‘. Hope to make it to your place somewhen… All the best! 🍕 ❤️🍕❤️🍕

    Got to tell you that the banjo music kind of doesn't bring me to Italy. More like deliverance country. Had to keep checking behind me. Very good recipe!!!! Will use from now on!!!

    Very interesting technique!! Why are you doing the first fermentation with half the flour? Is it some kind of tricks to accelerate the first fermentation or it has an effect on the taste/texture.
