Ingredients:
300g (11/2 cups) Arborio rice (http://amzn.to/2FLW7J7)
200g (7 oz) white button mushrooms/ chestnut mushroom
200g (7 oz) Portobello mushrooms
40g (1.4oz) dried porcini mushrooms (http://amzn.to/2DoHKMp)
3-Four tablespoons olive oil
45g+15g (Three tbsp+ 1 tbsp) butter
half of cup (120ml) dry white wine
half of onion
2 garlic cloves
1.6-1.8L (7-8cups) hen/vegetable inventory (recipe: https://goo.gl/4AMfv8)
1 tsp contemporary thyme
50g (half of cup) grated parmesan + extra for topping (non-obligatory)
1/Four bunch parsley
Salt
Pepper

Directions:
1. heat the inventory over low warmth.
2. Preparation: Roughly slice Portobello and chestnut mushrooms. Soak the porcini mushrooms in sizzling inventory/water for 20 minutes, then drain properly and maintain the liquids. Finely chop onion and parsley, crush garlic cloves.
3. Heat 2-Three tablespoons olive oil in a big saucepan over medium-high warmth. Stir within the Portobello and chestnut mushrooms, and cook dinner till mushy, about 5 minutes. add porcini mushrooms and cook dinner 2 min extra. Remove mushrooms and their liquid, put aside.
4. In the identical saucepan warmth 1-2 tablespoons olive oil and 1 tablespoon butter. Add onion and garlic. Sauté 2 minutes. Notes:
• You can use any type of mushrooms.

    Don't watch this clip in high volume using noise-isolating earphones, after a break-up. My mum caught me watching this, she pulled my one of the wires of my earphones and said "Why are you crying over a risotto?" It's embarrassing 😩
