    Risotto means "to flow". A proper risotto will puddle, the grains will not be clumpy. yours is way too tight.

    I've made this recipe many times over the years but it lacks a little flavor for me. Today I decided to add garlic a little fresh chopped rosemary and fresh thyme and it came out much better. I also use half the butter that it calls for.

    How many servings does this make?  It uses 1.5 cups rice, which isn't a lot, but 6 cups of broth.  Not really knowing how much broth gets absorbed vs evaporated – having never made a risotto before – I'm a bit at a loss as to how much this will make.Looks great!  Thanks for the info.  🙂

    To italians out there: don't non-italians usually make their risotto too dry? My italian friends taught me that it should spread out all over the plate when given a couple of shakes.

    Hi thanks for your question. 6 cups of chicken broth is approximately equal to 1419 ml. A great substitution for wine is chicken stock. Enjoy 🙂
