HOW TO MAKE ITALIAN SEASONED CHICKEN

Skin on, bone-in rooster quarters salt brined then roasted in a sizzling oven and eventually deep fried for a golden brown and additional crispy texture with a young juicy heart. Super simple recipe and completely scrumptious. Serve with roasted garlic mashed taters and/or baked mac-n cheese. Enjoy!!!

Shopping List:
Chicken quarters (2 thigh/legs)
48 ounces vegetable or canola oil for frying
2 tbls. Garlic powder
2 tbls. Italian seasoning
1 tbls. Course kosher salt
¼ cup kosher salt for the brine
four quarts of water
Drizzle of olive oil
Drizzle of pink wine vinegar

Directions:
Add four quarts of chilly water to an acceptable container to brine the rooster.
Add the ¼ cup kosher salt to the water and stir effectively.
Add the rooster to the brine, cowl and place within the fridge for two hours.
Pre-heat oven to 400 levels
To make the spice rub, combine collectively the garlic powder, Italian seasoning and Kosher salt.
Remove the rooster from the brine and rinse then pat dry the rooster.
Place the rooster in a baking pan and drizzle olive oil and pink wine vinegar over the rooster.
Sprinkle on the spice rub.
Cover with aluminum foil and roast the rooster within the pre-heated oven for 45 minutes.
When the rooster is sort of performed, pre-heat oil in a deep fryer or dutch oven to 350 levels.
Remove the rooster from the oven and instantly fry within the sizzling oil for about 1-2 minutes.
Serve with roasted garlic mashed taters and/or baked mac-n-cheese.
Enjoy!!!

Baked Mac-n-Cheese Recipe:
1 Lb. elbow macaroni
2 tbls. butter
¼ cup kosher salt or 1/eight cup desk salt for the pasta water
¼ cup parmigiano reggiano cheese
¼ cup mozzarella cheese
¼ cup shredded cheddar cheese
¼ cup cheddar cheese sauce
Sprinkle of bacon bits

Directions:
Bring a big pot of water to a boil
Add the ¼ cup Kosher salt
Cook the macaroni and cook dinner 2 minutes lower than package deal instructions simply in need of Al Dente.
In a sauce pan add the butter, milk and flour. Stir till mixed and the sauce thickens and the flour style is cooked out.
Add the cheeses and cheese sauce because the binder.
Add the cooked macaroni and blend effectively.
Place parts into small ramekins.
Top with bacon bits.
Baked at 400 levels for 20 minutes.
Serve.
