    The best pizza that I have ever had in my life was a Napolitana Pizza made by Italians in Manly Beach, Australia. If I visit Italia, I am going straight to Rome to see Vatican and then to Naples to eat Napolitana! It will be my pilgrimage.

    When using instant dried yeast is the recipe suggesting to let the yeast activate at 35-40 f in the fridge for 3 days before continuing the recipe?

    absolutely beatiful pizza! Let me ask you something: when we use instant dry yeast we should mix it directly on impasto. Didnt understand what do you mean by "for idy use 2 g and ferment for 3 days at 35 F

    Not that complicated . It's just a case of doing it right and giving the necessary time to proofing for your yeast balance. For my recepie, I just need to know a day in advance… after a nice bottle of wine, make dough and allow to prove over night. 1st thing early next morning, 2nd kneed and do 2nd prove. Lunchtime… make pizza 🙂 BTW, some have mentioned the need for an expensive oven….. I'm using the Chadwick oven (sits on a 4KW gas hob, ie WOK hob). This is a brilliant design and gets to the required 500'C.
