In this video from the “What 2 Cook Now & Gourmet Garden” sequence, Chef Dominique Rizzo reveals you the way to cook dinner a really fast straightforward pasta dish – Agnolotti with Sun-dried Tomato, Italian Herbs and winter greens.
Simply boil water in a pot;
Add a splash of olive oil to a pan, add in diced pumpkin and pink onions. Cook for six – 7 minutes.
Add garlic, Italian herbs – basil, oregano, rosemary & thyme.
Stir the sauce for two minutes, add a splash of vegetable inventory, simmer for an extra 2 inutes and add within the solar-dried tomatoes.
Meanwhile cook dinner the agnolotti within the boiling water; when cooked add the pasta to the pan; add in spinach leaves and cook dinner till the spinach is simply wilted.
Serve with pine nuts and parmesan cheese.
