    When in Rome literally, the last place I ate at for dinner was a place that wouldn’t serve pasta on the same plate as any of their meat entress; they serve stuff like this so you have to order the meat separately and of course this is much more expensive.

    I think this would be slightly improved by putting the spaghetti in the frying pan so it would collect the maximum amount of the garlic oil. 😊

    how about doing a pasta cacio e pepe sometime – soon ?
    every version i see on it is different – and i have never been able to figure how to get the cheese melted into something like a sause.

    If you add more pasta water to the oil and reduce you'll get a nice semi-thick sauce that isn't oily. The starch in the pasta water binds the oil. This is the method I have learned. Beginner, still trying to get it perfect thou…

    This is exactly how my grandmother from Naples made it except for the anchovies, which only my dad and me liked, so my mom made it this way minus the anchovies for the rest of the family. Try this with two or three anchovy fillets. This recipe is absolutely authentic !!

    You did it the wrong way you throw your spaghetti into the frying pan and cook them there for a few minutes so that the oil and garlic mix properly!!!!

    this looks amazing , can this be done with Butter instead of olive oil? olive oil in my country is several more expensive than normal oil or butter
    how much so ?

    well
    Butter is 1 – 2 $ per block
    Olive oil 20 -50 per 1L bottle
    vegetable oil is 1 -2 $ per litter

    Your meant to slice the garlic with a razor so it liquefies in the pan , haven't you seen the way paulie does it 😕
