    love the idea, but wish you had something to focus on ppl with very little space and almost no gadgets… 3 roughly 2'x2' counters, a slow cooker, a few pots, pans, and skillets, and a couple of baking dishes. not all non-stick, not all anything except well used by now. frozen foods, dried and/or canned foods, and low budgets. you started out low-budget, so far as i can tell from what i've seen. healthier than ramen, cheaper than going to fast food… And my son will need such recipes next year, when he starts college!

    That's not a carbonara, the only right ingredient you put is the egg (one is not enough but whatever). Everything else is wrong but it still look tasty so good job anyway ye

    I always make a kind of alfrado carbonara sauce( by that i mean alfrado sause with bacon in it) but i never knew just how simple carbonara was

    Embellishments aside (no major qualms, it should all work fine to make a Carbonara-inspired dish), kudos for a few things. No cream. Use of the starchy hot pasta water to temper the sauce.
    But one thing is missing sorely in many non-Italian recipes. The final dusting of freshly ground black pepper. The black pepper, egg and guanciale/pancetta are at the core of this iconic dish. It should be peppery, salty and smooth. It also looks nice on the plate:-) Carbonara reputedly refers to a coal miner's wife. Presumably that black dusting was inevitable.
    This is not an easy dish to get absolutely right, even in it's traditional version w fewer ingredients. Especially if you also use egg white, as is often the case here in Italy. The window between 'eggy' and overcooked then becomes pretty narrow.

    doubled the recipe to feed 4 adults and only used chicken sausage. still turned out tasty and was appreciated by all. I didnt have any bacon which I'm sure would have made it better. Thanks for the awesome recipe.
