Ingredients

1 cup (240 ml) espresso espresso, at room temperature
2 tbsp (30ml) amaretto liqueur

20 Savoyardi ladyfingers (about 180g)
Garnish
Cocoa powder, for dusting

1. Separate the egg yolks from the whites. Mix egg yolks with Three tbsp of sugar over a pot with simmering water till thick,

creamy and pale yellow coloured.A thermometer ought to learn 160F (70C). Add vanilla extract and switch to a different bowl to chill sooner.

    The eggs are cooked to 160F / 71C, which is the minimum cooking temperature for eggs recommended by the FDA. Not sure what all the hand-wringing about the eggs is about.

    240 ml Espresso coffee = 8 espresso shots? 1 single is 30 ml…
    WIll that be too strong?
