BUCATINI ALL’ AMATRICIANA | AMATRICIANA RECIPE

INGREDIENTS:
250g Bucatini Pasta
250g guanciale (pig cheek)
Handful of contemporary basil
400g Mutti peeled tomatoes
Pecorino Romano (as a lot as you want)
Extra virgin olive oil (EVOO)
½ glass white wine
Dried chilli (pepperoncino)
Rock salt
Pepper
5L water

METHOD:
1. Cut the guanciale into skinny quick strips and put to the facet.
2. Drizzle a small quantity of EVOO right into a pan and warmth it up.
3. Once the oil is heat, add the guanciale to the pan and depart it to crisp barely, stirring sometimes.
4. To convey out the flavour of the guanciale for the Bucatini all’Amatriciana, add ½ glass of white wine and stir it by means of. Leave it to evaporate.

    Can't tell you how many times my father walks into the kitchen before 12:00 and wants to know if I am done cooking.  Because I do laundry at the same time, we often eat between 1 and 2.  Your Nonna and my parents must have the same belly clock.Speaking of belly, did I miss the posting of the veal and eggplant dish, or is it not up yet?

    Vincenzo you are certainly the boss inthe kitchen. I love bucatini pasta, but never had the pleasure to taste guanciale. Such a simple, yet elegantly placed pasta dish.Unfortunately I am not a resident of Australia, so my free trip to Italy's is off.
