    i finished the pizza baking, it didn't shrink, was perfect! first rest was one hour, second rest was 1,5 hours for the dough balls. i learned one thing, adding oil or any fat makes pizza dough shrink!!

    i just prepared your dough, used 530 gram flour, 375 ml water, 14 gram salt, 14 grams instant yeast, 28 grams sugar, knead it for 5 minutes, sticky dough, let it rest for one hour covered with a little of olive oil to grease the bowl. as you can see in her video when she cut the dough, its still sticky, as you can see in many italian videos, dough is never knead long time and always sticky. a dry dough makes the pizza dough to shrink and a lot elastic when shaping your pizza. in begin i made a dough like baby legs so soft, ends up in good pizzas but always shrink. knead for 15 minutes is wrong. same goes for bread, do not use butter or oil in recipy. 530 grams of flour will ends up in 1030 grams of dough, 125 grams for small pizza and 250 grams is 9 inch pizza. one big tip, never press the air out of the dough and never use a roller to shape your pizza!!!

    this was the first video i saw where they explain all about every single ingredient, well done!! and for sure, i don't use any olive oil anymore in my recipy. many videos just show how to make dough, but none explain exactly what everything does. if you want to learn how to cook, you have to know every single ingredient function!! you get a million thumb up from me!! thank you!!

    Vegetable spray is toxic….. use olive oil. Get with the program.

    there was no "crunch" sounds when she cut through the final product, this is more novelty than authentic.

    Interesting information especially about adding olive oil or fat to the dough I might have to try not using it so much because I want my dough to be more airy and I usually do use flour to linr the tray with and it isn't lost on me that my dough balls are probably absorbing the flour so I'll have to try using cornmeal. What other kinds of effects can be produced by omitting certain ingredients? like what happens if you don't add salt?

    Chef Jordan can you help me with the 'Bread Flour', we have a few options where we live, Wheat/Sorghum/Millet/Semolina, I know it's the Wheat route but I don't know if All purpose alone will cut it, I'm also stuck with Instant Yeast only & don't know how & if it will substitute the Dry yeast

    Any tips if the dough is still shiny and very sticky after the second mixing step? I’ve made this recipe several times (it’s my favourite) but I’m not sure what went wrong tonight. Ended up adding a couple more spoons of flour and mixing about 6 minutes instead of 2-3 mins. Maybe the water wasn’t warm enough, or my mixer is on too low a speed?

    But… I mean… you’re making the dough a precise temperature, then swirling it around in a metal bowl that’s going to conduct the heat right out of it.
    I’m having trouble believing this level of precision is necessary.
