    I know I'm a few years late to the party, but Marcella's "Essentials of Classic Italian Cooking" says about the slapping, "Take the dough out of the bowl, and slap it down very hard against the work counter several times, until it is stretched out to a length of about 10 inches."

    This slapping is an easy way to stretch out the dough, which develops the gluten and improves the texture. I'm not sure if you're supposed to just toss it on the counter. Rather, I think you should hold on to one end while slapping so the dough stretches out away from you.

    Casio e pepe is one of my favorite things to eat! Would you do a segment on that since as meager as the ingredients are it could highlight techniques that lesser experienced cooks have but anyone cold find extremely enjoyable! Thank you!
